Four Cheese Garlic Shrimp Pasta!

Ingredients

  • 1 pound cooked shrimp, peeled & deveined
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 5 garlic cloves, minced
  • 8 oz spaghetti
  • 1 cup cooked pasta water (reserved)
  • 1 chicken bouillon cube
  • 1 cup heavy cream
  • 2 cups of Four-Cheese Italian White Cheese Blend (Mozzarella, White Cheddar, Provolone, Asiago)
  • 1 teaspoon salt
  • 1 tablespoon pepper
  • Finely chopped parsley & chives, for garnish

Instructions

  1. In a large skillet, add the shrimp, minced garlic, olive oil, salt, and butter. Cook for about 2 minutes on medium heat, stirring frequently. Do not overcook. Remove the shrimp and set aside.
  2. In a large pasta pot, cook the spaghetti in salted water according to package directions. Drain the pasta, but reserve one cup of the hot pasta water in the pot. Use this reserved water to dissolve 1 chicken bouillon cube.
  3. Add the heavy cream and the cooked spaghetti to the skillet where you cooked the shrimp.
  4. Bring to a boil, stirring frequently. Once the liquids are boiling, immediately add the four-cheese blend and continue stirring constantly.
  5. Continue to stir the spaghetti and the cream with the melting cheese.
  6. Heat for about 1 minute, or until the cheese completely melts and coats the spaghetti evenly.
  7. Reduce the heat to a simmer and continue to cook for about 2 minutes, stirring constantly to thicken the sauce to your desired consistency.
  8. Stir in the cooked shrimp and gently mix to combine, ensuring the shrimp is well coated in the cheesy sauce and warmed through.
