  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the diced onion and cook for 4-5 minutes, stirring occasionally, until it begins to soften and become translucent.
  2. Add the Italian sausage to the pot. Break it up with a spoon as it cooks, stirring frequently, until it is thoroughly browned and no longer pink. Drain off any excess grease from the pot.
