- In an electric mixer, combine butter, powdered sugar, and vanilla extract. Beat until creamy, scraping the bowl often.
- Slowly mix in the flour little by little until it forms a cohesive dough.
- If using, add sprinkles and beat again briefly to incorporate.
- Work the dough with your hands until it forms a smooth ball, then press it firmly and evenly into the parchment-lined pan.
- Chill for 1 full hour in the fridge to firm up the dough.
- Remove dough from pan using parchment paper and cut into bite-sized squares (approx. 1 inch).
- Place squares 1 inch apart on an ungreased cookie sheet. Bake for 10-12 minutes, or until bottoms just begin to brown.
- Keep a close watch as they brown quickly.
- Allow to cool completely on the baking sheet before serving. Enjoy!
