Instructions

  1. Fill a heavy Dutch oven or a heavy-bottomed pot with 4-5 inches of vegetable oil. Place an oil or candy thermometer in the oil to accurately monitor the temperature. Heat the oil to 375°F (190°C). Maintaining the correct temperature is crucial: if the oil is too cold, the pies will absorb too much oil and become greasy; if it’s too hot, they will burn quickly on the outside before cooking through.
  2. Unroll your refrigerated pie crusts. Using a 3-4 inch round or fluted cookie cutter, cut out 6 rounds from each pie crust. You may need to gather and gently re-roll the scraps from each crust to get the full 6 rounds.
  3. Place a heaping tablespoon of apple pie filling in the center of six of the pie crust rounds.
  4. Using your fingertips or a pastry brush, lightly moisten the edges of the filled pie crust rounds with water. Carefully place a second pie crust round over each filled round to form a sealed pie.
  5. Firmly crimp the edges of each pie all the way around using a fork. This not only creates a decorative pattern but, more importantly, ensures the pies are tightly sealed to prevent the filling from leaking during frying.
  6. In a small bowl, combine the powdered sugar, corn syrup, and water. Whisk until a smooth glaze forms. Set the glaze aside, covering it with a damp paper towel to prevent it from drying out while you fry the pies.
  7. Carefully deep fry one hand pie at a time in the hot oil. Fry each pie for 2-3 minutes, turning once, or until the pie crust achieves a deep golden brown color and is visibly crispy.
  8. Using a slotted spoon or spider, remove the fried pie from the oil and place it on a wire rack lined with paper towels to drain any excess oil.
  9. Immediately use a pastry brush to generously brush the prepared glaze over both sides of the warm hand pie. Place the glazed pie on a clean baking sheet or cooling rack to allow the glaze to set.
  10. Repeat the frying and glazing process with the remaining hand pies, one by one, until they are all cooked and beautifully glazed. Serve immediately while warm for the best taste and texture.
