Tips for Cheesecake Perfection

Creating a flawless cheesecake can sometimes feel daunting, but with a few key tips, you’ll achieve bakery-quality results every time. Firstly, ensure your cream cheese is completely softened to room temperature. This is crucial for a smooth, lump-free batter. Cold cream cheese will lead to lumps and an over-mixed batter, which can result in cracks.

Secondly, avoid overmixing the cheesecake batter once the eggs are added. Overmixing incorporates too much air, which expands during baking and then collapses during cooling, leading to cracks. Mix just until combined. For baking, a water bath isn’t strictly necessary with this recipe, but if you’ve struggled with cracks in the past, it can help create a more humid baking environment and a more even bake.

Lastly, proper cooling is vital. Cheesecakes hate sudden temperature changes. Allow your cheesecake to cool gradually in the oven with the door ajar, then on a wire rack at room temperature, before chilling thoroughly in the refrigerator for at least 6-8 hours, or ideally overnight. This chilling period allows the cheesecake to set properly and develop its full flavor and creamy texture.

Serving and Storage Suggestions

To get the cleanest slices, make sure your cheesecake is thoroughly chilled. Use a sharp knife dipped in hot water and wiped clean between each cut. This will give you those picture-perfect slices seen in the photos. Garnish with additional red velvet cake crumbs, chocolate shavings, or fresh berries for an extra touch of elegance.

Store any leftover Red Velvet Cheesecake in an airtight container in the refrigerator for up to 3-4 days. While it’s best enjoyed within the first couple of days, it generally holds up well. You can also freeze slices for longer storage; wrap individual slices tightly in plastic wrap, then foil, and freeze for up to one month. Thaw in the refrigerator overnight before serving.

Ingredients

RED VELVET LAYER

  • Butter for cake pan
  • Flour for cake pan
  • 1 box red velvet cake mix plus ingredients called for on the box

CHEESECAKE LAYER

  • 2 8-oz. packages cream cheese softened
  • 2/3 c. sugar
  • 2 large eggs
  • 1/3 c. sour cream
  • 1 tbsp. flour
  • 1 tsp. vanilla extract
  • 1/4 tsp. kosher salt

WHIPPED LAYER

  • 2 cups heavy cream
  • 4 tbsps powdered sugar
  • 2 tsp vanilla

Instructions

Red Velvet cake layer:

  1. Preheat oven to 350F (175°C).
  2. Butter and flour one 9-inch springform cake pan. This prevents sticking and ensures a clean release.
  3. Prepare the red velvet cake batter according to the box directions. Pour the batter into the prepared cake pan.
  4. Bake for 30 to 32 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  5. Let the cake cool slightly in the pan for about 10-15 minutes, then carefully remove it. Use a cake leveler or a serrated knife to ensure the top is even and flat. Set aside.

Make the cheesecake layer:

  1. In a large bowl, using a hand mixer or the bowl of a stand mixer fitted with the paddle attachment, beat the softened cream cheese and sugar until fluffy and well combined, for about 3 minutes. Scrape down the sides of the bowl as needed.
  2. Add eggs, one at a time, mixing on low speed just until combined after each addition. Be careful not to overmix.
  3. Stir in the sour cream, flour, vanilla extract, and kosher salt. Beat until just combined and smooth.
  4. Pour the cheesecake filling into a SEPARATE 9-inch springform pan that has been lined with parchment paper on the bottom.
  5. Bake until the edges are set and the center is only slightly jiggly, approximately 1 hour. This indicates it’s done.
  6. Let the cheesecake cool slightly at room temperature, then transfer it to the freezer to cool completely and firm up. This step is crucial for easy assembly and clean layers. Use a cake leveler again if needed/desired to achieve perfectly even layers.

NOTE: If you prefer to bake the cake and cheesecake together as a single unit:

First, bake the red velvet cake layer in the springform pan as directed. Once baked, cool it slightly. Then, pour the prepared cheesecake batter directly on top of the baked cake layer in the same springform pan. Bake until the cheesecake layer is set with a slight jiggle in the center. Immediately transfer to the freezer until completely cooled and firm before adding the whipped topping.

Make whipped frosting:

  1. Add all the ingredients for the whipped layer (heavy cream, powdered sugar, vanilla) to a chilled mixing bowl.
  2. Using a large balloon whisk or a stand mixer with the whisk attachment, whisk together the ingredients until soft peaks begin to form. This can take about five minutes by hand or less with a stand mixer.
  3. You’ll know the whipped cream is ready when it forms soft peaks and holds its shape on the whisk. Be careful not to overwhisk, or it will turn grainy.
  4. Carefully place the cooled and firm cheesecake layer on top of the red velvet cake layer.
  5. Evenly spread the whipped cream over the top of the cheesecake.
  6. For a decorative touch, use a decorator’s pastry tip to create beautiful whipped dollops around the edge of the cheesecake.
  7. Garnish with red velvet cake crumbs (you can use some of the leveled-off cake for this) and serve immediately.
  8. ENJOY your spectacular Red Velvet Cheesecake!
