Ingredients

  • 1 1/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 3/4 cup to 1 cup peanut butter as needed*
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg plus 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup white candy melts
  • Christmas Sprinkles as needed

Instructions

  • Preheat oven to 350F (175°C).
  • In a small bowl, thoroughly stir together the all-purpose flour, baking soda, baking powder, and salt. Set this dry mixture aside.
  • In a large mixing bowl, beat together the softened butter and your chosen peanut butter until well combined and smooth.
  • Gradually add both the white sugar and brown sugar to the butter and peanut butter mixture. Beat for approximately 2 minutes until the mixture becomes light, fluffy, and creamy.
  • Add the whole egg and the extra egg yolk along with the vanilla extract. Beat for another 30 seconds until just combined. Then, slowly incorporate the reserved flour mixture into the wet ingredients, mixing until just incorporated and no streaks of flour remain. Be careful not to overmix.
  • Using a cookie scoop (about 1.5-2 tablespoons), portion out uniform balls of dough and place them onto a baking sheet lined with parchment paper or a silicone baking mat. Leave enough space between cookies for spreading.
  • For the classic peanut butter cookie look, use the tines of a fork to gently press down on each cookie dough ball, creating a criss-cross pattern. This also helps flatten them slightly for even baking.
  • Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are lightly golden and the centers are just set. Avoid overbaking to ensure a soft and chewy texture.
  • Once baked, remove the cookie sheet from the oven and allow the cookies to cool on the sheet for about 30 minutes. They will continue to set as they cool.
  • While the cookies cool, melt the white candy melts. Place them in a microwave-safe bowl and heat in 25-second intervals, stirring well after each interval, until completely smooth and melted. Be careful not to overheat.
  • Once the cookies are cooled and the candy melts are ready, carefully dip each cookie individually into the melted white chocolate. Cover approximately one half of each cookie, allowing any excess to drip off.
  • Place the dipped cookies back onto the parchment-lined cookie sheets. Immediately decorate with Christmas sprinkles or any desired toppings before the white chocolate sets.
  • Allow the white candy melts to fully set at room temperature or in the refrigerator for quicker setting, before storing or serving your magnificent White Chocolate Dipped Peanut Butter Cookies.

Yields approximately 24-28 cookies.
